Colorado Part 1

This summer we got to go on vacation with my family to Twin Lakes, Colorado. Not only was this our first big vacation with Ryder, but it’s also the first time my entire family has gotten to go on vacation all together! It was a pretty big deal and we had such an awesome time with everyone.

We made so many memories, saw beautiful sites, and of most importantly, got to spend quality time with loved ones. All 14 of us stayed in an Airbnb in Twin Lakes. It had gorgeous views of the lake and surrounding mountains as well as quite a bit of acreage to enjoy. It was dreamy. (Although the house did have terrible WiFi and mice…but we won’t dwell on that.)

Our first day in Colorado we kept things pretty chill and went hiking. We strapped up the little ones and maneuvered our way through the gorgeous trail and valley. From there we had lunch in Buena Vista and went home to rest. It was a wonderful day and a great start to our trip.

Clouds started to roll in as we hiked our way out. We missed the rain by seconds. But not before we got some nice cloudy photos and enjoyed the cool breeze.

Chocolate Chip Banana Bread

Baking has been a hobby of mine for the last couple of years and I can honestly say that I LOVE it. Nothing beats making something delicious and enjoying it with loved ones. Which is why I’m so excited to share this recipe with y’all! I make this banana bread on a pretty regular basis. Both my husband and 19 month old son love it, which is pretty big win in my house. You can make it plain, with chocolate chips, walnuts, etc. It’s moist, rich, and SO. FREAKIN’. EASY.

One of my biggest pet peeves when I look up recipes is having to scroll passed a thousand word essay just to find the instructions. So, I’m not going to do that. Below you’ll find the ingredients and simple instructions. ENJOY!


1 cup sugar

1 ½ cups all-purpose flour

2 eggs

½ cup butter, melted

4 large, overripe bananas

½ tsp. salt

1 tsp. baking powder

1 tbsp. Vanilla extract

1 cup mini chocolate chips or walnuts.

Preheat oven to 350

  1. Place overripe bananas in a stand mixer with the paddle attachment and mix until the bananas are completely mashed and runny.
    *If you don’t have a stand mixer, a hand mixer will work just fine!

  2. Combine your sugar, butter, eggs, and vanilla to the mashed bananas. Mix well.

  3. Slowly add in your flour, salt, and baking soda. Mix well.

  4. Remove bowl from stand and gently stir in your chocolate chips using a rubber spatula.

  5. Grease your pan and pour in batter.

  6. Bake for 60 minutes or until a toothpick comes out clean.

*TIP: Lightly coating the walnuts in flour before adding them to the batter will keep them from sinking to the bottom.
